It's the Mash! It's the Monster Mash! Not quite, it's the Monster Rocky Road! Yes, it's that time of the year again when the pumpkins start appearing on doorsteps and the supermarkets go wild with every kind of tasty treat you can possibly imagine. Speaking of tasty treats, we couldn't let Halloween creep by without bringing you scary good recipe from our resident food blogger, Laura Ford.
From Laura Ford...
These cute little rocky monsters are the most decadent and delicious treat to enjoy this Halloween. I like to add a touch of dark chocolate to my rocky road to reduce how sugary it tastes, but feel free to leave it out if you like (although it does add an extra spooky feel to the Rocky Monsters).
This is a great melt and mix recipe for the kids and you can also get the kids crafting by making little black witches hats, bat wings or vampire teeth out of cardboard to make your rocky monsters extra scary!
350g Crunchie chocolate block or plain milk chocolate, broken into pieces
50g dark chocolate, broken into pieces
2 tbsp peanut butter
1 tbsp salted butter
Pinch of salt
1 cup shredded coconut, toasted
2 cups marshmallows, chopped into small pieces
¾ cup roasted peanuts
2 x 55g chocolate coated Turkish Delight bars, chopped into small pieces
1 cup rice bubbles
Edible googly eyes for decorating
Makes 18 little monsters
1. Line two muffin tins with patty pan (cupcake) cases.
2. Place the milk chocolate, dark chocolate, peanut butter and salted butter in metal bowl. Place bowl over a pot of simmering water, making sure the bottom of the bowl does not touch the water. Mix and melt ingredients together until combined. Take the chocolate mixture off the heat to cool slightly.
3. Add the toasted coconut, marshmallows, roasted peanuts, Turkish Delight and rice bubbles and stir to combine.
4. Spoon the mixture into the patty pan cases and gently press the mixture down. Add 2 edible googly eyes on top and allow to set in the fridge for an hour.
