MINI CAKE DONUTS (WHY NOT) // BY Katherine Sabbath

header There is nothing that welcomes instant, childish glee quite like the sight of a brightly coloured donut, so you could just imagine my unabashed delight when I dreamt up (yes, dreams really do come true) a recipe for these colourful mini cake donuts! These cake-style donuts have a soft, fluffy texture and a deliciously moist crumb. They seem as though they just melt away in your mouth, while the topping provides an exciting crunch. What’s more, these painfully cute creations are baked not fried, which means that now you can savour the delectable flavour of baked donuts without the added grease and mess from frying! Too deliciously easy! For the Cake Donuts:
  • One non-stick mini donut pan (you can find these in cake decorating stores and online retailers)
  • 1 ½ cups plain flour
  • ½ cup caster sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¼ tsp nutmeg
  • ½ tsp cinnamon
  • 1 tsp vanilla extract
  • 1 large egg
  • ½ cup milk
  • ½ cup butter, meltedimage-1
For Decorating:
  • 300 grams white chocolate, melted. You can also use any other variety of chocolate for this recipe!
  • Assorted sprinkles and candies of your choice. I used crushed musk lollies, sprinkles, edible confetti, and coloured candy pearls.decorating
Method: 1)  Preheat oven to 170 degrees. In a bowl, mix flour, sugar, baking powder, salt, nutmeg, and cinnamon. 2)  In another bowl, beat egg and blend with milk, melted butter, and vanilla. Add to flour mixture and mix until combined. 3)  Spoon or pipe mixture into mini donut pan and bake for around 10 minutes, or until golden. Carefully remove donuts and place onto a cooling rack. Use the remaining donut batter to repeat the baking process – this should give you lots of mini donuts! 4)  Now here’s the fun part! One by one, dip your donuts into melted chocolate and cover with different variations of sprinkles and candies. You can be as creative as you’d like with this! 5)  Need I say more?
